Job Summary: Directs the stewarding team to maintain a sanitary and safe environment for food and beverage preparation and storage as well as provide clean service ware and utensils for the entire food and beverage operation.

Primary Duties & Responsibilities:

  • Represents Odawa Casino Resort in the most positive manner with internal and external guests to satisfy service expectations. Interacts effectively with a diverse group of guests and Team Members, learns and uses operating practices of the department and the organization.

  • Makes recommendations to hire, terminate, promote, demote, transfer, provide training opportunities, recommends merit increases, evaluates performance, creates and adjusts performance standards.


  • Maintains upbeat and positive attitude.


  • Selects, trains, schedules and supervises all members of stewarding in accordance with established standards for safety, production and performance.


  • Counsels team members as necessary.


  • Delegates dish and equipment washing and silver polishing as necessary.


  • Maintains and works towards continually improving quality of sanitation.


  • Supervises all stewarding staff to perform daily tasks.


  • Maintains all dish machines in operating order.


  • Assigns daily work to stewarding team.


  • Sets up and breaks down banquet functions.


  • Makes sure chefs have necessary utensils and items to operate within the kitchen.


  • Must be able to work closely with all phases of management; counsel, guide and instruct personnel in the proper performance of their duties.


  • Assists the chefs in making sure each food outlet is running efficiently.


  • Sets examples in cleanliness and sanitation to team.


  • Encourages cross training.


  • Maintains records required by regulatory.


  • Maintains and update MSDS books as necessary.


  • Maintains approved labor costs.


  • Prepares periodical performance reviews.


  • Documents pertinent information in daily shift logs.


  • Responds to all pages by beeper or radio promptly.


  • Ensures all assigned staff complete tasks before clocking out.


  • Submits work order for necessary equipment repairs.


  • Maintains par levels of plate ware, glassware, silverware, small wares and related items.


  • Stocks chemicals in respective areas and maintains pars as necessary.


  • Ability to work with chemical dispensing equipment.


  • Runs clean dishes to front of the house if necessary.


  • May assist with additional internal guest requests if necessary.


  • Sweeps and mops floors as necessary.


  • Helps resolve guests’ issues if requested.


  • Transfers food and dishes between floors of establishment.


  • Attends all meetings and/or training sessions as required.


  • Abides by all health codes and regulations and maintains a safe and clean work area.


  • Must be able to maintain neat and well groomed appearance in accordance with our grooming and appearance standards.


  • Displays an energetic attitude while working with guests and Team Members.


  • Performs all other duties as assigned within the scope of work.


  • Supervises heavy cleaning staff during closed hours of operation.

Minimum Qualifications:

High School Diploma or GED and five years experience as a steward. One (1) year supervisory experience. Long periods of standing and walking required. Must be flexible with shift and days off. Significant lifting up to eighty (75) pounds, along with bending, reaching, stooping, pushing and pulling. Exposure to loud and continual noise levels and a smoke filled environment. Must have working knowledge of sanitation requirements; computer literate. Must be able to meet Odawa Casino Resort internal training requirements. Must maintain confidentiality at all times. Must be able to obtain a gaming license in accordance to the regulations established by the LTBB Gaming Regulatory Commission. Pre-employment drug testing will apply to all selected applicants receiving an offer of conditional employment.
