Morel & Chicken Pot Pie

3oz butter
1 pound Fresh Morels or assorted fresh mushrooms (such as crimini, shiitake, and button mushrooms), sliced
3 garlic cloves, minced
1/4 cup onions diced
2 pounds skinless boneless chicken thighs or breast, cut into 1 1/2 inch pieces
3oz flour AP
4 cups chicken stock or low-salt chicken broth
3/4 cup White Wine
1/2 cup Peas frozen
1/2 cup carrots 1/2 inch dice
1/2 cup potatoes 1/2 inch dice
1/2 cup asparagus 1/2 inch pieces
2 teaspoons chopped fresh thyme
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 cup finely grated Parmesan cheese

Melt 3oz of butter in heavy large pot over medium-high heat. Add chicken, mushrooms, garlic, onions, carrots and potatoes cook until chicken is browned, about 8 minutes. Add flour stir until it is thoroughly incorporated and thick. Slowly add chicken stock 1cup at a time letting the pot come to a simmer in between additions, stirring constantly. Add wine, thyme, salt and pepper. Reduce heat to medium-low; simmer uncovered 20 minutes to blend flavors. Stir in peas, asparagus and parmesan cheese, taste and adjust seasoning to desired taste serve in soup bowls topped with Cheddar Chive Biscuits.
